Ingredients

Serves 4

  • 200g short grain rice
  • 400ml water
  • 1 tsp salt
  • 200ml coconut milk
  • A little coconut oil (for greasing)

Method

  1. Wash the rice a few times until the water runs mostly clear, then soak for about 30 minutes.
  2. Drain and add to a pot with the water and salt. Bring to a boil, then reduce the heat and cook until the water is mostly absorbed.
  3. Add the coconut milk, stir through, and cook on low heat until fully absorbed and slightly sticky.
  4. Transfer to a lightly greased tray and press it down into a flat layer.
  5. Let it cool slightly, then cut into squares or diamonds to serve.
